Abstract: The food processing industry is vital for satisfying the world's demand for safe, nutritious, and easily available food items. The sector, however, confronts problems in terms of maintaining consistent quality, eliminating waste, and assuring cost-effective production. The incorporation of Artificial Intelligence (AI) technologies such as machine learning, computer vision, and robotics in the automation of food processing sector machinery demonstrated significant potential to revolutionize the sector. It has attracted substantial attention due to its potential to improve efficiency, quality, and safety within food manufacturing operations. However, integrating AI technology with existing systems and procedures is one of the biggest challenges. This necessitates a considerable time and money investment, as well as skill in both AI and food processing. It additionally obligates the companies to address the ethical consequences of AI use, such as worries about privacy and employment displacement. The current study provides an overview of the current state of AI applications in the food processing industry, focusing on the influence of machine automation techniques on production, quality control, and resource optimization. It expands on the prospective applications of AI in the field, taking into account possible challenges
