| dc.description.abstract | This study explored deep eutectic solvents (DESs) as sustainable alternatives to alkaline extraction for cassava leaf protein isolate (CPI). A number of DESs were evaluated for extraction efficiency. Lactic acid-glycerol, selected for further analysis, demonstrated superior protein content (22.16 ± 0.36 mg/100 g dm) and recovery yield (73.77 ± 1.05%) while maintaining structural integrity and functionality. Enhanced essential amino acid composition (40.36%) and in vitro digestibility confirmed its nutritional superiority. This study highlights the potential of DES, particularly lactic acid-glycerol, as a sustainable, effective alternative for extracting high-quality CPI with improved functional properties. | en_US |
