Abstract: The cassava leaves contain a significant amount of protein, the presence of toxic compounds like cyanide and antinutrients like tannins makes it harder for the body to fully absorb and utilize this protein effectively. Therefore, detoxification was applied to diminish cyanide and tannin to 85% and 69% in leaves, respectively, where the protein content was reduced to 9.7%.The detoxification process applied to cassava leaf protein isolate induced notable alterations in its compositional, structural, morphological, molecular, and thermal attributes, distinguishing it from the non-treated leaves. Additionally, the functional properties of the protein isolate demonstrated enhancements after detoxification under varied pH conditions. These augmented functional attributes position the detoxified cassava leaf protein isolate as a promising active ingredient for incorporation into diverse food formulations
